Tambu Phuket is a fine-dining Indian restaurant set on the rooftop of the Avista Hideaway hotel, overlooking the sea. It’s at its most striking at sunset, when the terrace turns into a front-row seat for the view. The space feels like a sleek, contemporary “tent”: low lighting, tasteful music, a sense of privacy, and polished table settings. In bad weather the open-air terrace can be windy or rainy, but the mood remains intimate.
The menu revolves around progressive charcoal cuisine — classic Indian flavors reimagined through heat, smoke, and a touch of culinary theater. Dinner often begins with a welcome drink and a small amuse-bouche. Some dishes are finished tableside (for example, chaat with liquid-nitrogen effects), and chefs may step out to introduce and explain the courses. There are tasting menus — some paired with wine or whisky — as well as an à la carte selection.
Expect bold starters such as pani puri and shiso/palak patta chaat, along with delicately handled paneer dishes (paneer tikka, paneer subzi). Seafood is a strong suit too: crab served with warm bread, plus lobster and prawns. You’ll also find biryani, lentils (including dal makhni), and juicy lamb chops and kebabs. Two standout breads are the black garlic naan and roti with house-made butter. Spice levels can be adjusted on request, and allergies or dietary needs — including gluten-free — are best discussed in advance.
Dessert isn’t treated as a routine finish but as a final act of its own: saffron crème brûlée, tres leches with an Indian twist, kulfi, and a “tower” dessert with multiple fillings.
